Moisture Characteristics of Dried Cassava (Manihot esculenta Crantz) Grates

Abstract


The moisture desorption isotherms of the dried cassava grates were determined at 30, 40 and 50oC using the standard gravimetric method. The BET, GAB, Smith, Kuhn, Henderson, Oswin and Karel models were fitted to the experimental sorption data. Linear regression analysis was used to evaluate the constants of the sorption equations. The isotherms exhibited Type II behavior and were found to be temperature dependent. According to the goodness of fit test applied, Kuhn and BET models proved the least adequate to describe the experimental data. The other models fit the data reasonably well, with GAB being the best fit followed by Henderson and Kahrel.
